Sweet potato soup for dinner tonight!<br />

While I was on my trip to Brugge approximately 2 weeks ago, I saw this book on soups on the ferry cruise. It was such an interesting book that I decided to give it a go. The recipes looked pretty reliable too.<br />
<br />
Took me 3 and half hours to make this soup. All the hassle in making the fresh chicken stock, then cooking the vege till tender before blending them all together.<br />
<br />
But the end result was good. The soup tasted amazing. As good as butternut squash soup. Well, as long as my guests love it and ask for a second helping, I guess I have been pretty successful. hehe..<br />
<br />
I have to apologise for not blogging for 3 days! That's because tuesday, I received good news that I have received a GP post in scotland, hence, was hyper with celebration for 3 days. Too busy to blog!<br />
<br />
Back on track again!<br />

Thanks to the book on 'Soups'! After the successful sweet potato soup, will try cream sweetcorn soup next!<br />
<br />
Sweet potato soup recipe:<br />
<br />
Ingredients:<br />
4-6 rindless smoked bacon rashers<br />
25g butter<br />
1 onion, chopped<br />
2 carrots, sliced<br />
2 celery sticks, sliced<br />
1 bay leaf<br />
750g sweet potatoes, sliced<br />
250g potatoes, sliced<br />
1.2 litres chicken stock<br />
150ml water<br />
125ml dry white wine<br />
1/4 tsp grated nutmeg<br />
1/4 tsp white pepper<br />
salt<br />
<br />
1. Heat the bacon in a frying pan over a gentle heat until the fat runs, then raise the heat and cook over a moderate heat until very crisp. Using tongs, transfer the bacon on to kitchen paper to drain.<br />
<br />
2. Add the butter to the bacon fat left in the frying pan and cook the onion, celery, carrots and bay leaf over a low heat for 5-8 minutes, stirring frequently.<br />
<br />
3. Transfer the mixture to a saucepan. Add the sweet potatoes, potatoes, stock, measured water and wine. Bring the mixture to a boil, then lower the heat and simmer, covered, for 35-40 minutes, or until the vegetables are very tender. Remove and discard the bay leaf.<br />
<br />
4. Puree the mixture in a blender or food processor until smooth. Transfer to a clean saucepan. Add the nutmeg, white pepper and salt to taste. Put the pan over a moderate heat, stirring until the soup is hot.<br />
<br />
5. Serve the soup in warmed bowls, garnishing each portion with the reserved bacon.<br />

Char Kway teow...A dish which I love the most while in Malaysia and would make once a while in UK. The picture above was a char kway teow dish I made almost 2 years back. Thanks to Yao for the most amazing penang cookbook which has the most amazing char kway teow recipe ever.<br />

I am sharing my most precious Char Kway teow recipe:<br />
<br />
Chilli paste:<br />
10 dried red chillies, soaked until soft<br />
2 fresh red chillies<br />
2 shallots, peeled<br />
1/2 tsp salt<br />
4 tbsp cooking oil<br />
<br />
5 tbsp lard or cooking oil<br />
2 cloves garlic, chopped<br />
2 tbsp chilli paste or to taste<br />
200g medium-sized prawns, shelled.<br />
<br />
1 chinese sausage, sliced<br />
400g fresh flat rice noodles (kway teow)<br />
1 tsp light soy sauce<br />
1/2 tsp dark soy sauce<br />
1 tsp salt or to taste<br />
4 eggs<br />
1/2 tsp ground white pepper<br />
1 tbsp water<br />
200g bean sprouts<br />
50 chinese chives<br />
150g cockles (optional)<br />
100g crab meat (optional)<br />
<br />
to prepare chilli paste:<br />
Cut up roughly the chillies and shallots. Pound or blend in an electric blender adding some water if necessary. Season to taste with salt. Heat oil over low heat and fry the chilli paste, stirring continuously until fragrant and oil has separated from the paste. Set aside.<br />
<br />
To fry the kway teow:<br />
Heat oil and fry the garlic until aromatic over medium heat. Turn up the heat and add the chilli paste. Fry until aromatic before adding prawns and Chinese sausage slices. Add the kway teow and stir fry for a few seconds before adding the light and dark soy sauce and salt.<br />
<br />
Make a 'well' in the centre of the kway teow and add a tbsp of oil. Crack in the eggs and season with pepper. Let the eggs start to set before scrambling. Fry together with the kway teow.<br />
<br />
Add the water, bean sprouts, chives and cockles (if using). Stir-fry for 20 seconds before dishing out. Serve topped with some crab meat, if desired.<br />

I think the sauces use makes a lot of difference. I tend to use ABC kicap manis and soy sauce maggi brand. I did not follow the tsp/tbsp of sauces above, but used my judgement instead when I fried the kway teow.<br />
<br />

1. Put the chicken pieces, pork ribs, ginger, spring onions, garlic, white peppercorns and 2 litres/70fl oz/8 cups water in a large saucepan and bring to the boil. Reduce the heat to low and simmer for 2–3 hours, skimming off any scum from the surface as required.</div>

2. Remove the pan from the heat and discard all the solid ingredients. Cool the stock, then strain over a bowl lined with muslin. Pork stock can be frozen for up to 1 month.</div>

<span style="text-decoration: underline;">Phnom Penh Noodle Soup</span></div>

1. Pour the pork stock into a saucepan and bring to the boil over a high heat. Reduce the heat to low and simmer. Meanwhile, dry-fry the whole onion in a frying pan over a medium-high heat until the outer layer is slightly charred all round. Add the charred onion to the simmering stock. Put the coriander seeds, cloves and Sichuan peppercorns in a spice bag or secure in a piece of muslin and add into the stock. Continue to simmer, covered, for 45 minutes.</div>

2. Put the pork mince in a bowl and season with salt and pepper. Tip into a food processor and blend to a smooth paste. Put the pork back into the bowl, add the spring onion and mix until well combined. Using a teaspoon or melon baller, scoop up the paste and shape into chestnut-sized balls and arrange on a plate – they don’t need to be perfectly round. Repeat until all the pork paste is used. Cover with cling film and leave to one side.</div>

3. Heat the oil in a large frying pan over a medium-high heat. Add the prawns and stir-fry for 3–4 minutes until they turn pink and are cooked through. Transfer to a plate and leave to one side.</div>

4. Bring a saucepan of water to the boil and blanch the bean sprouts for about 20 seconds. Divide the warm, cooked noodles into deep soup bowls, then top with the blanched bean sprouts.</div>

5. Bring the stock back to the boil, then add the pork balls and cook for 4–5 minutes until they are cooked through and float to the surface. Divide the pork balls into the bowls of noodles and add the cooked prawns.</div>

6. Add the fish sauce, a generous pinch of salt and the sugar to the pork stock and bring to a vigorous boil. Ladle the stock into the bowls, then sprinkle over the coriander and fried shallots. Serve immediately with the lime wedges and extra bean sprouts on the side.</div>

He went to the market and found a really fresh salmon which was quite expensive. Without the salmon, we probably wouldn't be able to have a feast like this. =p<br /><br />I tried to make dragon roll which failed miserably because the avocado I bought was not of very good quality. Thank God CF managed to get some good avocados from Morrisons so that saved the salmon rolls. He also bought the sweet potatoes so we could make tempura.<br /><br />I bought the miscellanous stuff to make the sushi. Anyway, we had great fun. I started preparing at 4pm. At the same time, I was waiting for CF to call me so that he could pass me the salmon. I was guessing that he was having his afternoon nap so I didn't want to pester him to bring over the salmon. By the time I got the salmon, it was 7pm. I told Gerald and Shen wei to come over at 7pm and when they got over, I had only just started preparing the salmon.<br /><br />Preparing the salmon was hard work without a sashimi knife. I only had a cooks knife which I had to sharpen so many times so that I do not destroy the precious fish. Took me 40 minutes to deskin the fish and cut it into different parts for nigiri and sashimi. It was then CF surprised me with another salmon from Morrisons. So, I had to prepare the salmon again. By the time I finished preparing two salmons, it was 8.30pm which is not too bad.<br /><br />We ate the sashimi and concluded that the salmon from market was so much fresher compared to the salmon bought from Morrisons. Morrisons salmon tasted as though it was thawed after being freezed even though the fishmonger from Morrisons told CF that it was caught on the morning itself. The salmon from the market was caught 2 days earlier yet it tasted so good. I was surprised by CF skills in choosing salmon because the salmon was so fresh. I admit I was worried beforehand that his money may be wasted if the salmon wasn't fresh and I might not make any sashimi or nigiri if that was the case.<br /><br />Sushi night was great. The next time I am making sushi again would probably be in 3 months time. Had a cake order from a friend this week which was a bit of a disappointment to me because I accidentally put in a bit too much sugar making the cream too sweet. If not, the cake would have been just nice.<br /><br />Tried baking two new cakes which were green tea tiramisu and mango cheesecake. After baking the green tea tiramisu, I realise that I am not actually much of a fan of green tea because it has a slight tinge of bitterness which my taste buds are unable to tolerate. =p Mango cheesecake was quite good but it was not set enough or maybe I had been too greedy and put in too much mango puree. Plus the mangoes in UK are not sweet so my mango cheesecake wasn't that great in my opinion.<br /><br />Anyway, I decided to go back to basics again..save my time and the cakes are delicious too. I decided to try a marbled cheesecake from the recipe book I got Malaysia (Y3K Delicious cakes). It is considered one of the most basic cakes compared to the other cakes I have attempted which were relatively complicated.<br /><br />I brought the marbled cheesecake to Yee Kuan's place for pot luck and there was good response. Many liked the cake and took many many helpings. Some people wanted to take some cake home but I quickly stored it away so that I can keep some pieces for shen wei's friends who are my regular guinea pigs + customers.<br /><br />Since the cake was so well received, I decided to share this recipe on my blog. =)<br /><br />Ingredients:<br />For base:<br />200g digestive biscuits (milled)<br />50g ground almond (toasted)<br />120g butter (melted)<br /><br />Filling:<br />750g cream cheese<br />120g caster sugar<br />1 tsp vanilla essence<br />120g white cooking chocolate (melted by double boiling)<br />30g cornflour<br />300ml UHT whipping cream<br />3 eggs (beaten)<br /><br />Topping:<br />50g dark cooking chocolate (melted by double-boiling)<br /><br />Utensils needed:<br />9" loose-base cake tin<br /><br />Method:<br />1. Base: Preheat the oven at 140 deg celcius. Mix melted butter with dry ingredients until well-combined. Press into a 9" loose-base cake tin. Refridgerate until set.<br /><br />2. Filling: Beat cheese and sugar until creamy. Add in melted white chocolate. Add in cream, vanilla essence and cornflour.<br />Lastly, add in eggs.<br />Pour batter onto set base, drizzle with melted dark chocolate on top.<br />Steam bake for 1 hour 15 minutes.<br />Leave cake in oven with door closed for 30 minutes but temperature turned off.<br /><br />3. Remove cake from oven and let cake cool at room temperature. Refridgerate for 6 hours before serving.<br /><br />Enjoy baking this fabulous cake!! I was wrong! Yau told me that he ate a triple layered cheesecake which tasted so good while he was in Malaysia and he challenged me to bake this cake. I was like 'Where on earth am I going to get this recipe from?' When I flipped through the wonderful recipe book I got from Malaysia, I was ecstatic to find this recipe in the book! It is definitely the best recipe book I ever had and it only cost 3.50 pounds (after converting) for this book!<br /><br />Since Yau said it was the best cheesecake he had ever eaten, I wanted to attempt this cake and see how good it really is. It was indeed the best cheesecake I have ever eaten....even far better than the oreo cheesecake. But baking it? Took me 7 hours.<br /><br />Recipe book told me that 30 minutes of baking was enough. I looked into the oven when 30 minutes was up but my cake was still wobbly. So, I left it in the oven to bake for a longer period of time and it took me 1.5 hours to bake a layer!!!!! So 3 layers took me 4.5 hours altogether!!!! But satisfaction I got from baking this cake was totally indescribable. A sense of achievement to me. =p<br /><br />I would probably advise those who have never baked simple cheesecakes before to at least try out simple cheesecakes before attempting this complicated cheesecake. I would say that it is a cake that need lots of experience with cheesecakes because you will need to have the skill to bake this really tough cheesecake. The skills to be able to identify when it is cooked, how to beat the cheese etc... Recipes are only a rough guide (In my opinion). But if you have never attempted a simple cheesecake before and this complicated cheesecake succeed? Then congrats!!! I am proud of you! =p<br /><br />Triple layered cheesecake from recipe book:<br /><br />Ingredients for base:<br />200g digestive biscuits (milled fine)<br />50g cornflakes (milled fine)<br />30g soft brown sugar, 125g butter<br />1 tbsp instant coffee powder (mixed with 1/2 tbsp hot water)<br />100g cooking chocolate (melted by double-boiling)<br /><br />Filling:<br />750g cream cheese (at room temperature)<br />120g caster sugar, 30g cornflour (sieved)<br />300ml whipping cream, 4 grade A eggs (lightly beaten)<br /><br />A: 100g cooking chocolate (melted), 2 tbsps cocoa powder (sieved)<br />B: 100g white cooking chocolate (melted), 1 tsp vanilla essence<br />C: 1 1/2 tbsps coffee powder (mixed with 1/2 tbsp hot water), 1/4 tsp coffee oil, 1 tbsp Kahlua (optional)<br /><br />Decoration:<br />300g whipping cream, some fresh strawberries and deco gel<br /><br />Ganache:<br />75ml whipping cream, 100g cooking chocolate, 1 tsp glucose syrup, some cocoa powder<br /><br />Method:<br />1) For base: Heat butter in a pan over low heat. Add in other ingredients. Press mixture evenly onto a 9" loose-base tin. Brush melted chocolate on base and chill until set. Wrap outer tin with aluminium foil. Preheat oven at 140 celcius.<br /><br />2) For filling: Beat cheese, sugar and cornflour until smooth and creamy. Add in cream. Lastly, add in eggs. Divide mixture into 3 portions.<br /><br />3) Stir in ingredient (A) into one portion. Pour onto no.(1) and steam-bake for 30 minutes.<br /><br />4) Stir in white chocolate and vanilla into one portion. Pour onto chocolate layer which has baked through. Steam-bake for another 30 minutes.<br /><br />5) Stir coffee and coffee oil into the last portion. Pour onto white chocolate layer which has baked through. Steam-bake for another 30 minutes. Turn off oven and leave cake in oven with door closed for 30 minutes.<br /><br />6) Remove cake from oven and leave to cool completely. Cover cake and chill for at least 6 hours.<br /><br />7) Remove cake from tin. Cover with whipped whipping cream. Spread a layer of ganache on top. Decorate with ganache at sides. So back to baking again, I attempted a few recipes from my new recipe book I got from Malaysia. Did not want my money spent on this recipe book to be wasted so must definitely try some of the recipes to see how wonderful the cakes turn out to be. The recipes are all very good but it is disappointing because some of the ingredients are very difficult to get in Leeds. So I can only attempt those which are near possible to bake. =p<br /><br />This cake I have attempted over the week is called mango yoghurt cake. Was 'forced' to challenge this recipe because my buyer requested me to bake a cake with mango in it. The try out turned out pretty well but of course I had to improve a few things to make the cake more presentable. Initially, I cut the mango slices too thick. The first pic is the try-out cake that I attempted before I could decide if I could sell this cake. Because it turned out good, I made it again and sold it (the bottom 2 pics). Have to be presentable lah if not how to sell? =P The first pic I simply decorate because I only wanted to make sure the taste of the cake is ok. Quality control...haha<br /><br />Had a few friends from facebook requesting recipes of my recent cakes, so have to share the recipe...easiest way to share is on my blog so that I don't have to type my recipe a few times for different people. =p<br /><br />Recipe for mango yoghurt cake (I have modified the recipe to make it possible for me to bake):<br /><br />Ingredients for sponge cake:<br /><br />(A)<br />5 egg yolks<br />100gm sugar<br />1/4 tsp salt<br />1/2 cup water<br />1/2 cup corn oil<br />1 tsp vanilla essence<br />170g cake flour<br />2 tsp baking powder<br /><br />(B)<br />5 egg whites<br />1/2 tsp cream of tartar<br />100g sugar<br /><br />Filling:<br />2 mangoes (cubed)<br />1 cup plain yoghurt (150gm)<br />100g caster sugar<br />20g gelatine (dissolved in 1/4 cup water)<br />350ml whipping cream<br /><br />Decoration:<br />1 large mango<br />Some whipping cream (I used 284ml to cover my cake)<br />white choc (grated to sprinkle)<br /><br />Method:<br />1) For cake: Mix ingredients (A) and stir till smooth.<br />2) Whisk (B) till stiff, then fold in (A), pour into a 9" round tin and bake for about 45 minutes, or more or till cooked.<br />Remove from oven. Leave to cool. Slice into 3 layers.<br />3) Filling: Mix mangoes, yoghurt and sugar in a bowl.<br />4) Dissolve gelatine in water. Double boil over simmering water until clear and mix with (3).<br />5) Whip up cream and add to mango mixture. Divide into 2 portions.<br />6) Place a layer of cake into tin. Spread a layer of no.(5) on top. Repeat this step till finished. Keep cake chilled. Trim edges of cake to a nice round. Decorate as desire. Haha...but in UK, it is precious cuz good cakes are hard to get. :p I tried cakes in various places and none can satisfy me. I tried starbucks cheesecake which disappointed me greatly. Even Marcus (one of my best british friends who can really cook very well) hunted me down for my cakes and told me that he remember my cakes tasted very good but he couldn't remember which was good as all of them were.<br /><br />I picked up baking cuz I dun like any of the cakes in the shops in UK. The chinese cake shops in UK are few. They can decorate the cake so beautifully. However, the cakes tasted so dry and horrible. So horrible that I decided to bake my own.<br /><br />Therefore, I came up with my own chinese cakes to suit my appetite....At first, it was done voluntarily in my first two years when I started learning baking as a hobby. Then, people starting requesting me to bake cakes for them. It was a failure in my opinion, but strangely people liked it and took loads home. He told me to plan and then go shopping.. :S<br /><br />Anyway, I decided to try one of Gordon's recipe which is 'crispy' salmon as the starter. Unfortunately the salmon in Marks and spencers had no skin on it. There was no choice as I could not find salmon in tesco. I was lucky enough to find a goose in Tesco which had been reduced from 50 pounds to 27 pounds and it was a really really HUGE goose. Three times the size of the duck.<br /><br />Anyway, the starter: Sorry that it is burnt at the top cuz I couldn't see what I was cooking..WL never repaired his kitchen stove's lights. Then spread evenly on a pyrex bowl or oven dish, making sure that none of the chicken are overlapping each other. </p><p>Preheat oven to Gas mark 7.</p><p>Roast for around 1 hour or when the chicken is cooked/tender in your opinion and have a nice colour. </p><p>Sorry for the vague description as I always modify recipes and ended up not being able to describe very well.</p><p>As some maybe wondering what is the orange stuff on the plate, it is sweet potato mash. Lightly grease a 9 inch springform cake tin then place baking parchment around the tin.</p><p>2) Melt the butter and chocolate in a saucepan over a low heat, stirring until smooth. Remove from the heat and beat in the sugar.</p><p>3) Add the eggs and milk, beating well. Stir in the flour, mixing just until blended. Spoon into the prepared tin, spreading evenly.</p><p>4) Bake in the oven for 25 minutes. Remove from the oven and reduce the oven temperature to 160C/325F/Gas mark 3.</p><p>5) For the topping, beat together the cheese, sugar, eggs and vanilla extract until well blended. Stir in the yogurt , then pour over the brownie base. Bake for a further 45-55 minutes, or until the centre is almost set.</p><p>6) Let cool before removing from the tin. Everyone liked oreo cheesecake as compared to other cheesecakes that I made so I have put it on my blog to share with those who have been asking me fervently for the recipe. Haha...I will put up a brownie base cheesecake recipe that I made recently which in my opinion, tasted better than the oreo cheesecake. The brownie was first tasted and the cheese left an aftertaste which was really nice and creamy. Anyway, the recipe for oreo white chocolate cheesecake.</p><p>Oreo White Chocolate Cheesecake</p><p>For the base:</p><p>1) 200g oreo biscuits</p><p>2) 50g unsalted butter</p><p>For the filling:</p><p>1) 300g good quality white chocolate, broken into pieces</p><p>2) 400g full-fat soft cheese</p><p>3) 150ml soured cream</p><p>4) 2 eggs</p><p>5) 1 tsp vanilla extract</p><p>6) 10 pieces oreo biscuits (adjustable to own preference)</p><p>Steps:</p><p>1) Preheat the oven to gas 3/160C/325F. Make the base: put the biscuits in a plastic bag and crush using a rolling pin. In a small non-stick pan, melt the butter then stir in the biscuit crumbs and mix well. Using the back of the metal spoon, press the mixture evenly into the bottom of a 9 inch springform cake tin. Chill.</p><p>2) Make the filling: melt the chocolate. In a bowl, briefly stir the cheese, soured cream, eggs and vanilla extract together with a wooden spoon to blend lightly. DO NOT overbeat (too much air makes the cheesecake rise, then sink, or else, then crack). Add the melted chocolate and stir until smooth (the mixture will thicken slightly). Crush the 10 pieces of oreo biscuits as fine as you can in a plastic bag. Add the crushed biscuits into the mixture and mix well (careful with overbeating).</p><p>3) Spread the mixture evenly over the biscuit base and level the top. Bake for 50 minutes until the mixture feels firm round the edge and is slightly soft but set in the middle (It is important not to overcook the cheesecake, or it will go grainy around the edge).</p><p>4) Remove from the oven and leave to cool. Remove the cake from the cake tin and chill. Remove the bowl from the heat and leave to cool until needed.</p><p>3) Break the eggs into a bowl. Add sugar. Whisk until the mixture is extremely thick and foamy. It's ready when the whisk leaves a ribbon-like trail of mixture when you lift it out of the mixture. Gently stir the chocolate mixture then whisk it briefly into the egg mixture. A soon as it is combined, avoid over-mixing. Add the flour and gently fold in using a large metal spoon. Divide the mixture between two tins (9 inch springform cake tin), and spread evenly.</p><p>4) Bake in the heated oven for 20 minutes until a light golden brown and the sponges spring back when gently pressed. Run a round-bladed knife around the inside of the tins, just to loosen the sponges, turn out onto a wire rack and leave to cool completely.</p><p>5) To make the filling, wipe the strawberries and save half of good-looking ones for decoration. Thinly slice the rest into a bowl. Add the orange juice and the sugar and mix gently. Leave for 10 minutes for the flavours to develop. Grate the white chocolate and gently fold half into the whipped cream. Save the rest for decoration.</p><p>6) To assemble, set one sponge on a serving plate and spoon on the strawberries and juice. Cover with the chocolate cream then top with the second sponge. Beat the eggs. Gradually beat the eggs into the creamed mixture, adding a little flour and baking powder if the mixture shows signs of curdling. When all the eggs have been incorporated, add the rest of the flour, the nuts and crumbs.</p><p>3) Spoon into the tin and bake in a preheated oven, 180 celcius/ 350 farenheits/ Gas Mark 4, for approximately 45 minutes, or until firm to the touch. Cool for about 10 minutes in the tin, then turn out and allow to cool. Split into 2 layers.</p><p>4) Whip the whipping cream until soft peaks is reached. I normally add the caster sugar and cocoa powder in between the process when the cream looks slightly whipped. Add the walnuts after spreading the filling on one side of the cake. I normally spread both sides of the cake with filling and then sandwich the layers.</p><p>5) Spread the remainder of the filling (except walnuts) on the top and sides of the gateau. Decorate as own preference.
